recent study conducted by Cornell University revealed the phytochemicals/flavonoids contained in natural cocoa were higher
serving per serving compared to red wine and green tea. The researchers discovered 611 milligrams of the phenolic compound
gallic acid equivalents (GAE) and 564 milligrams of the flavonoid epicatechin equivalents (ECE) in a single serving of cocoa.
Examining a glass of red wine, the researchers found 340 milligrams of GAE and 163 milligrams of ECE. In a cup of green tea,
they found 165 milligrams of GAE and 47 milligrams of ECE, Cornell University. These
phytochemicals contain antioxidants that fight off free radicals. These radicals are looking for
electrons (subatomic particle that carries a negative electrical charge) to pair up with; unfortunately they usually steal
them from healthy molecules. This process has been known to cause cellular damage and eventually disease and death. It is
suggested that individuals who exercise daily have a greater need for antioxidants intake due to the increase of oxidative
stress (produces more free radicals). Under normal conditions this reaction is not a problem but when increased can cause
defects in DNA. The ORAC level (Oxygen Radical Absorbance Capacity) is one way to determine how much antioxidants are found
in some foods. The more antioxidants the better chance your body will have to fight those annoying free radicals. So during this Valentine’s Day season keep
eating your berries but once or twice a week feel free to indulge in some real natural chocolate. It’s important to
keep mind in order for the antioxidants to have an effect the chocolate must be at least 85% cocoa. Unfortunately some of
these chocolate products don’t taste like your typical Snicker’s bar (quite bitter). Here are some good tasting
choices: Endangered Species Chocolate . Hershey’s Dark Chocolate. Of course be mindful not too rationalize eating large amounts of these goodies
which will lead to obesity and some clogged arteries. Moderation is the key with diet and exercise. Happy Valentine’s
